30 min · Serves 2

What you’ll need

  • 2 oz cultivated lion’s mane, thinly sliced
  • 1 1/2 cups water
  • 1 cinnamon stick
  • 3 cardamom pods, lightly crushed
  • 1 black-tea bag
  • 1 cup milk or oat milk
  • 1/2 tsp vanilla extract
  • 2 tsp honey or maple syrup

Allergen notes: Milk if dairy milk is used; check plant-milk labels. Black tea contains caffeine.

Let’s make it

  1. Combine mushrooms, water, cinnamon, and cardamom. Bring to a boil, then simmer for 20 minutes until the mushrooms are fully cooked.
  2. Remove from heat. Add the tea bag and steep for 3 minutes, then remove. Strain the infusion, discarding woody spices.
  3. Gently warm the milk with vanilla and honey. Divide the infusion between two mugs, top with warm milk, and stir. Serve hot.
