Golden lion’s mane steaks

A crisp sear, garlic butter, and a squeeze of lemon.

25 min · Serves 2

What you’ll need

  • 8 oz cultivated lion’s mane, trimmed into 1-inch slabs
  • 1 tbsp olive oil
  • 1 tbsp butter or vegan butter
  • 1 garlic clove, crushed
  • 2 thyme sprigs
  • 1 tsp soy sauce
  • 1/2 lemon; salt and black pepper

Allergen notes: Soy; milk if dairy butter is used. Use tamari to avoid wheat in soy sauce.

Let’s make it

  1. Warm a heavy skillet over medium heat. Add the mushroom slabs to the dry pan and press gently with a spatula for 4–5 minutes per side to release moisture.
  2. Add the oil and sear for another 3–4 minutes per side, until browned and cooked throughout. Lower the heat if the edges darken too quickly.
  3. Add butter, garlic, thyme and soy sauce. Baste for 2 minutes. Season, squeeze over the lemon, and serve with toast or mashed potatoes.
