25 min · Serves 2

What you’ll need

  • 2 oz fresh cultivated lion’s mane, thinly sliced
  • 2 1/2 cups water
  • 4 thin ginger slices
  • 1 cinnamon stick
  • 1–2 tsp maple syrup, optional
  • 2 lemon slices

Allergen notes: No standard major allergens in the listed ingredients; check individual sensitivities.

Let’s make it

  1. Combine the mushroom, water, ginger and cinnamon in a small saucepan. Bring to a boil.
  2. Reduce to a steady simmer, partly covered, for 20 minutes. Add a little water if needed to keep the mushrooms submerged.
  3. Strain into two mugs. Add maple syrup to taste and finish with lemon. Serve warm; this is a culinary drink, with no medicinal claims.
