King trumpet mushroom steak

Steakhouse-inspired · Meaty, rich, umami.

30 min · Serves 2

What you’ll need

  • 12 oz cultivated king trumpet mushrooms
  • 1 tbsp olive oil
  • 2 tbsp butter or vegan butter
  • 2 garlic cloves, crushed
  • 2 thyme sprigs
  • 1 tbsp soy sauce or tamari
  • 1 tsp maple syrup
  • Mashed potatoes, roasted vegetables, and peppercorn sauce, to serve

Allergen notes: Soy, wheat in some soy sauces, and milk in dairy butter or sides.

Let’s make it

  1. Slice mushrooms lengthwise into thick planks. Lightly score the flat surfaces in a crosshatch pattern without cutting through.
  2. Heat oil in a heavy skillet over medium heat. Sear mushrooms for 5–6 minutes per side until browned and tender. Work in batches rather than crowding the pan.
  3. Lower the heat and add butter, garlic, and thyme. Baste for 2 minutes. Stir soy sauce with maple syrup, add to the pan, and turn the mushrooms in the glaze for 1 minute. Serve with your sides and peppercorn sauce.

Use trusted cultivated mushrooms and cook thoroughly. These are culinary recipes, not health treatments. Never use foraged mushrooms.
