30 min · Serves 2

What you’ll need

  • 10 oz cultivated king trumpets
  • 1 tbsp olive oil
  • 1 tbsp butter or vegan butter
  • 1 garlic clove, minced
  • 1/3 cup vegetable stock
  • 1 tsp lemon juice
  • Parsley, salt and black pepper

Allergen notes: Milk if dairy butter is used; check the stock label.

Let’s make it

  1. Cut stems into 3/4-inch rounds and halve the caps. Lightly score both flat sides of each round.
  2. Heat oil over medium-high heat. Sear mushrooms for 4–5 minutes on each side. Reduce to medium heat, add stock, cover and cook 7–10 minutes until tender throughout.
  3. Uncover and let excess liquid evaporate. Add butter and garlic, cook 1 minute, then finish with lemon, parsley and seasoning.

Use trusted cultivated mushrooms and cook thoroughly. These are culinary recipes, not health treatments. Never use foraged mushrooms.
