What you’ll need

  • 3 oz cultivated chestnut mushrooms, sliced
  • 2 1/2 cups water
  • 2 thyme sprigs
  • 1 small black-tea bag, optional
  • 1 tsp lemon juice
  • A small pinch of salt

Allergen notes: No standard major allergens in the listed ingredients; check individual sensitivities.

Let’s make it

  1. Combine mushrooms, water and thyme. Bring to a boil and simmer for 20 minutes until the mushrooms are fully cooked.
  2. Remove from the heat. If using black tea, steep the bag for 2 minutes and remove; do not boil the tea bag.
  3. Strain, add lemon and a little salt, and pour into mugs. The optional black tea contains caffeine.
