30 min · Serves 2

What you’ll need

  • 8 oz cultivated chestnut mushrooms, trimmed
  • 6 oz pasta
  • 2 tbsp butter
  • 2 garlic cloves, minced
  • 1/3 cup heavy cream
  • 1/4 cup grated Parmesan
  • 2 tbsp chopped parsley
  • Salt and cracked black pepper

Allergen notes: Milk and wheat; check pasta for egg.

Let’s make it

  1. Cook the pasta according to its package. Reserve 1/2 cup pasta water, then drain.
  2. Melt butter in a wide skillet over medium heat. Add mushrooms and cook 10–12 minutes until browned and tender. Add garlic and stir for 1 minute.
  3. Add cream and simmer gently for 2 minutes. Toss in the pasta, Parmesan, and enough reserved water for a glossy sauce. Finish with parsley, salt, and cracked pepper.
