25 min · Serves 2

What you’ll need

  • 3 oz cultivated golden oysters, chopped
  • 2 1/2 cups water
  • 2 thin ginger slices
  • 2 tsp white miso, or to taste
  • 1 sliced scallion

Allergen notes: Soy in most miso; some miso also contains barley or wheat.

Let’s make it

  1. Combine mushrooms, water and ginger. Bring to a boil, then simmer for 20 minutes until the mushrooms are fully cooked.
  2. Strain into a heatproof jug. Save the cooked mushrooms for another dish.
  3. Mix the miso with a little warm broth, then stir back into the jug. Pour into mugs and add scallion. Taste before adding any salt.
