What you’ll need

  • 2 oz cultivated golden oyster mushrooms, chopped
  • 1 cup water
  • 4 thin ginger slices
  • 2 tbsp lemon juice
  • 2 tsp honey or maple syrup
  • 1 cup chilled sparkling water
  • Ice and lemon slices

Allergen notes: Check individual sensitivities and ingredient labels.

Let’s make it

  1. Combine mushrooms, water, and ginger. Bring to a boil, then simmer for 20 minutes until mushrooms are fully cooked. Add a little water if needed.
  2. Strain and dissolve the honey in the warm infusion. Cool promptly in an ice bath, then refrigerate until cold; do not leave the broth standing at room temperature.
  3. Divide the cold infusion between glasses with ice. Add lemon juice and sparkling water, stir gently, and garnish with lemon. Make only what you plan to serve, or refrigerate the infusion and use within 24 hours.
