30 min · Serves 2

What you’ll need

  • 3 oz cultivated blue oysters, sliced
  • 2 1/2 cups water
  • 1 lemongrass stalk, bruised and cut into large pieces
  • 3 ginger slices
  • 1 tsp soy sauce or tamari
  • 1 tsp lime juice

Allergen notes: Soy; wheat in some soy sauces.

Let’s make it

  1. Place mushrooms, water, lemongrass and ginger in a saucepan. Bring to a boil, then simmer for 20–25 minutes until mushrooms are fully cooked.
  2. Strain carefully, removing every woody lemongrass piece.
  3. Add soy sauce and lime juice. Taste, adjust with water if needed, and sip warm from mugs.
